Chef Guillermo Reyes brings an eye for artistry, a talent for culinary creativity, and a heart for ministry when he steps into our kitchen. We don't necessarily know what will be on the menu (he loves to be inspired "in the moment"!), but we do know it will always be delicious, beautiful, and healthy. Ours is a "scratch" kitchen; we stay away from processed foods and use fresh ingredients whenever possible, often from our own organic gardens.
Perhaps the most frequent question asked by our guests is, "Can I take your chef home with me?" Although we haven't yet figured out a way to make that possible, the next best thing is recipes from Guillermo himself. Click on any of the titles below to go to the complete recipe. We've just started this section of our website, so check back often, as we continue to add more recipes. One caveat: as a true artist, Guillermo is constantly tweaking his recipes, and they continue to evolve. This means that the recipe posted here may not be an exact reflection of what you tasted at the Retreat Center! But you'll be able to get the final, perfected versions of all our recipes when the new Collins Retreat Center Cookbook comes out sometime in the near future. And to truly experience the real thing, we invite you to schedule a retreat here or come to one of our programs--we would love to serve you our wonderful food in person!
